Well it's dry July and I am having a strawberry lemonade - strawberry syrup, fresh lemon juice, the end of the strawberry kvass, and filtered water.

Strawberry kvass - cut strawberries tops off generously, save the strawberries for something else. Mix the tops with lots of sugar and boiled and cooled (or really filtered like lifestraw filtered) and any spices you want. Let this sit loosely covered until it's fizzy, then strain and bottle.

Strawberry syrup - lots of ways to make this. I did cook down strawberries in sugar and water then strained it. Tossed the mush of sweet strawberry gook into the kvass pitcher based on this recipe she doesn't use the tops for some reason but I always make the fruit fermented drinks with the peels, tops, ends - one of the reasons to do it in the first place is to divert waste!

So this is a wild fermentation, no starter? And is it reliable or do you sometimes get the wrong kind of microbes and get off flavors?

I've done sauerkraut as a wild fermentation, but it's raw and so the cabbage provides the bugs, and the salt contributes another control. And you do have to be pretty thorough about keeping air out of it. But it's mostly reliable.

Do the strawberry tops get boiled too, or do you mean only boil the sugar and water?

Pineapple tepache is by far my most reliable fruit kvass, it has never failed. I use straight tap water, not filtered and don't need the pineapple to be organic.

Strawberry is slightly fussier but so far has worked. Don't boil the tops, no. Use more sugar than seems reasonable, and organic strawberries work better. Yes it's a wild fermentation but surely would be delicious started with some ginger bug too. I'll note that I live in a warm climate and house is cooled to 78F, that's about 26 in civilized degrees, maybe warmer than some houses. And I make sourdough all the time, other fermented pickles (not sauerkraut yet, live sauerkraut is available commercially here) not sure if that makes it easier.
