Delightful - easy and light.

Courtesy of Duenan's inspiration, herring-in-tomato-sauce with onion and wilted baby spinach mixed through with pasta. I would've loved capers or olives but couldn't be arsed DRIVING 15 MINUTES TO THE NEAREST SHOP just to get some.

You know I totally forgot about tossing it into pasta. I might try that out with a tomato base later in the week.

Adding in the pasta water made a huge difference as it often does. Helps get that glistening look and smooth mouth feel without gobs of oil

I think it slightly thickens the sauce a little as well doesnt it or have I got that wrong?

Yes, the starches help thicken the sauce too
