To "season" your oven, just cook a cheap frozen pizza directly on the rack. Some cheese will inevitability drip and burn, giving it that classic oven smell.
I know what you are talking about and did have it awhile but it did seem to go away quick enough that I have forgotten about it.

Here's a thought: clean the surfaces with some diluted white vinegar and heat the oven once more. The vinegar will not smell nice either, but it may clean up any residues that may cause the smell.
What brand did you buy if I may ask? I bought a new oven 2-ish years ago. The smell was there, but it was not particularly bad and the problem sorted itself quite quickly.
Our airfryer took about a week of daily use.
