IMO "goo" is usually used when talking about something unpleasant. I think of honey as something very pleasant (barring any accidents).
However, after reading the other comments: I think I'm probably wrong and honey is indeed a goo.

Sure, maybe, but to get really gooey.. it's much more elastic, IMO. Like aloe vera gel, snot, hot cheese, melted marshmallow, egg (raw)

Anything sticky and viscous would count, probably, so yes.
To be slime, you need a certain elasticity or gelatinousness as well. Honey isn't really slime.
