Is it really "censorship" if they openly state which shit they don't want to have near their platform? If I opened any kind of platform myself, these two would be right behind "illegal activities" and "hate speech". And I'd be proud to place them there.

The jurisdiction of the country where the server/company is located.
There are some common ground rules what people consider illegal. You cannot cover every countries' rules, of course, but blatant copyright violations, CSAM distribution, doxxing data is something most people can agree on.
And the jurisdiction of the location of the server is an important point, too.
Selfhosting has more reasons than "just" evading rules one does not like.
