Can someone explain this part?

That means you still have access to essentials like WhatsApp, Google Maps, Spotify, Signal, and iMessage via a third-party solution that needs temporary access to a Mac.

Does that mean you can only use this phone as intended if you own a Mac because you somehow have to set up the apps outside the phone and that only works on Mac (not on Linux, Windows)? That sounds... Like a narrow market. What's the target audience? California parents?

You only need that for the iMessage bit. All other apps are supported natively or through an Android compatibility layer. This phone isn't meant to be your single do-it-all device, but rather a return to calling+messaging+listening+pictures and a splash of maps to get around. Meant to be distraction free. Most things should work and you're meant to use a laptop/desktop/tablet for the things that don't/are blocked. For the smartphone route there's the Jolla Phone, this is a distraction-free communication device.
