Secure Space Encryptor (https://paranoiaworks.mobi/) is one that I know and they have source code published, although I personally don't understand coding so I can't guarantee how secure it is, but its been out for like a decade and I haven't heard anything bad about it, and its on F-Droid. They won't know you are secretly sending an encoded "ATTACK AT DAWN" message hidden inside the cute cat photo.
