I was in my late twenties when I learned that the numbers on a toaster are simply time and not degrees of toastiness.

Which is why if the toaster is already hot when you put in a fresh slice of bread, that time will give you extra toastiness vs the same time starting with a cold toaster.

I don't know how smart it is yet, because it's only toasted once.

That isn't always true! Some toasters have sensors to detect how dark the bread is.

... but most just use timers :(

Technology Connections is one of those channels with a name that feels it doesn't fit, while creating high-quality informative content like Smarter Every Day and Veritasium (but about machines in and around the house we've been using and not understanding for literal decades).
