No fucking surprise. We threw away a more nutritious grain in favor of one that gave a much poorer quality but HIGHER YIELD.
Capitalism screwing us over again.
And searching agricultural references, Perobelli found that it had been grown in Italy, too, until farmers shifted toward higher-yield commercial varieties. That solved the mystery of the seed bag stashed away in the attic: It had survived because Grossi’s grandfather saved some of the heritage grains.
The food scientists found that, compared with modern wheats, grano del miracolo was richer in phosphorus and iron. Moreover, to their surprise, they found that T. turgidum had less gluten than modern wheat. And it packed a lot of lysine and tryptophan, the essential amino acids that serve as proteins’ building blocks. It also had more arginine, an amino acid that children need to grow. “The richness of microelements, minerals, and the greater presence of proteins other than gluten were very pleasant surprises,” says Perobelli
"Oh, but it's cheaper to produce so there's more of it! And, more people eat, that way!"
No. Replacing higher quality food with more quantity only benefits the rich. We could grow more of the higher quality wheat and sell it at a price that could be afforded, if not for the filthy rich demanding to take more of the profit for themselves, and refusing to pay us what we're worth, again to increase their own profit.
Higher yield for the same work benefits the RICH ONLY.
