Ratatouille, the provencale version (stew like). Eggplant, bell pepper, onion, garlic, zucchini, tomatoes and sometimes olives, I serve with either baguette or rice.

In a similar vein, look into dalcha! We watch ranveer brar’s recipe on YouTube. He makes it with chicken, but we replace that with potatoes, bottle gourd, and Indian eggplants.
Vöner(Vegan Kebab)
A really big salad with my fave veggies, spicy chikn (I normally just use Boca spicy patties and cube them), sunflower seeds, sliced almonds, other nuts I may have in the cupboard. Cliche for us, I know 😅
I also love my spicy sw pasta salad I make with a creamy black bean/Adobo Chipotle sauce. I'll make a huge batch of it and eat off it for a week!
And, my staple favorite: chickpea salad. 🤤
Vegan breakfast burritos
My favourites are burritos and chilli sin carne (or both combined).
Bon Appetit introduced me to the idea of miso polenta and it’s now a staple for me. Goes amazing with anything. Cheap as fuck. Good as fuck. Dress it with some oil and you can easily make it look like a top class dish. I’ve been fighting to get it on the menu at the vegan restaurant I’m the chef at but polenta is real difficult to serve to order in a reasonable time
