Are there any canon DS9 comics, books, etc. that continue where it left off? I've finished TOS and TNG, but neither left me with a feeling of sadness like DS9 has.

When Terry left the show, they no longer had likeness rights for her. Hence no Jadzia, not even in the flashbacks in the final ep. The studio either wasn't willing or just couldn't afford what she was asking. As you say, Jadzia was out by then, so Ezri makes sense.
