Why??? I don't understand why hackers would attack something like this instead of, I dunno, being the unredacted Epstein files, the list of everyone working for ICE, the address of major billionaire CEOs who are responsible for ecological disasters, or contributing to the Palestinian genocide.

Because they don't care. It just mass spam and rob whatever. If it sticks, great, if it doesn't, they just move on. The only principle here is money.
