Wild mushrooms have to be one. They are incredible and can provide all the umami you ever need, not to mention complex flavours. The vegan foods I make so often rely on shrooms, I use a lot of dried mushrooms.
There's a species I like to pick that tastes like curry and if you put it somewhere sweet it tastes like liquorice. Amazing.
Pickled, dried, salted, raw, cooked... always great.
Edit. They are also a gift from the earth in a way that makes me feel very humbled. I can just walk into the forest and all these wonderful things are just there.
When I have very good shrooming luck like I did today, I do tend to say a thanks to the local spirits and gods of the forest, in true pagan fashion, lol. Those beliefs are still very much alive in the day to day customs even though we rarely think about it.
