For a big fish, it's how many parasite they have not if there's one or not. When you're a giant fish the number matters. The article mostly talks about possible allergic reactions to some of the parasite antigens which can persist after the parasite is killed by freezing.

    See, the parasite is killed by freezing, but you're still eating dead parasite bodies. That's what really gives fish it's flavour. Fish is uniformly tasteless, but ... parasites! Sorry, Big Fin, I had to expose the conspiracy.
