The first thing I would try is booting from a live USB, mounting the old install, regenerating inframfs then update GRUB from terminal (it may or may not let you from terminal in the GRUB menu also)

    I did all that and more already. That's why I ultimately gave up. It's rare that I can't fix a Linux issue, but this is one of those rare cases.
