I’m currently connecting wirelessly to the Xbox and the internet isn’t great (50mbps). Ping will often sit around 15ms but randomly shoot up to over 1000ms. If it’s a busy house the ping can be over 100ms.

Will an ethernet cable improve anything and would there be any difference between cat6 and higher in my case?

If you can't get better speed into the house from your ISP, try looking at QoS (Quality of Service) at router end for improvement. Most folks are looking to reduce lag for gaming, so this article might help.
