Trying to decide if I should go with the previous version MacBook Pro M1 Pro (late 2021) with better RAM / memory or the new MacBook Air M2 with less RAM / memory

RAM wins all the time when you compare 8 gb to 16 gb. It doesn't matter how old the model is.

That's not true from 16 gb though. But 8 gb to 16 gb, more RAM just wins.
