Can I use my 65w Mac charger to charger my 15 pro max to get the best charging speed or is it bad to do?

You probably can, I think iPhone regulates how much power it receives and will only get what it can take. I don't think it will speed up the charging speed though. I use a 30w charger to charge my 15.
