I have just done the last update on my watch and while I was at first very excited about the new feature measuring how much time one has spent in daylight, I quickly realize that as winter approaches, I will be wearing jackets with the sleeves covering my wrists and thus my watch.

What do you people plan to do about this? Just not care and cover the watch or will you keep it exposed to the sun (and the cold)?

I wondered the same thing, since I have been wearing a hoodie a good bit recently…

In the Health section on it, it states “When unobstructed, Apple Watch can automatically record an estimated amount of Time in Daylight in Health,” (emphasis mine), so I suspect we are not going to get very good reading during the winter months even if we’re outdoors…

My guess is that it uses GPS information combined with the weather information to get an estimate. I haven't really done any measurements to check accuracy. But I have exclusively been wearing long sleeves for at least two months now and so far it seems OK.
