I was thinking that publishing some of the handwritten notes (or as many of them as possible) might help. For me, that would be enough evidence to indicate that a writer wasn't lazy and came up with these ideas on their own - assuming the writing itself doesn't have any obvious AI tropes in.

But I feel like there are other ways, and I'm curious what ideas everyone else has

Rather than trying to convince people that you don't use AI, just write something personal and creative. Develop your voice. The plagiarism machine is unable to generate text that is consistently human-like and unique.
