The process of caffeine extraction alters flavor because theres no (feasible) process that is able to extract the caffeine without also extracting at least some other components of the coffee flavor.
Id rather have water than decaf but I'll drink my coffee at any time of day. Caffeine has nothing to do with when you can drink it.
