I also agree that a study of 20 adults is absurd.
I'm late 30s. I've slowed down a lot since my 20s. Reflexes aren't anywhere near as sharp, I use to have very quick hands and reflexes. As far as memory, I'm still good at remembering things that I care about but it's far from the steel trap it use to be. For stuff that's not things that I care about I have to write it down, I'm still pretty good but I forget stuff now.

Yep Braising is the way. It's amazing for tougher cuts. I do a brisket ragu 160oC for 4-6 hrs, a parchment paper lid and uncovered for the last 2 hrs. A dutch oven isn't necessary, I sometimes use a stewpot or a chef's pan.
If the pins match then it shouldn't be a issue. It should be like changing your monitor. In saying that I've not done this so take it with a grain of salt.
